Paleo Flours

Hello cupcakes! 

Since the holiday season is fast approaching, I thought I would write a post about Paleo flours. 

I purchased these cute glass containers at Hobby Lobby for around $2 a piece. I think this makes storing the flours easier. From left to right, I have: cassava flour, arrowroot flour, coconut flour, and almond flour. I like to search around at different stores and online to see which places have the best prices on these flours. I got the almond flour and coconut flour at Wal-mart and I got the cassava flour and arrowroot flour on Amazon. 

Cassava flour: gluten free, grain free, & nut free, used as a 1:1 substitute for flour

Arrowroot flour: gluten free, grain free, & nut free, used as a thickener, easily digested

Coconut flour:gluten free, grain free, & nut free, high in fiber, slow digesting carbs

Almond flour:gluten free & grain free, a little higher in protein, low carb, contains higher amounts of manganese, vitamin e, and monounsaturated fats

What is your favorite flour to bake or cook with? p.s. these are the four flours I use for my Paleo waffles. 

This is a picture of my dinner from Wednesday night. My dad and I made dinner: grilled pork tenderloin, grilled shrimp, and a salad. 
This was my plate for one of my Thanksgiving meals. I had turkey, shrimp cocktail, my homemade chicken pepper nachos, fruit, veggies, and olives. 
My youngest sister took this snap chat on our way to Thanksgiving. 

I hope you all had a fantastic Thanksgiving. I cannot wait to share some recipes with you for Christmas. This week will be week 2 of BBG (Bikini Body Guide) for me! WHOO!

Barney Butter

Hello cupcakes,

I wanted to share some new almond butters I tried! I have mentioned Barney Butter before in a previous post (Link here: Healthy Fats). I can't get over how cute these little single serve packets are... they would be perfect for traveling. I love to go on road trips, camping, long hikes, and outdoor adventures so these are literally perfect. They are also perfect for a grab and go snack. You can take them in your purse, diaper bag, gym bag, or book bag. Here is a link to Barney Butter's Website: Barney Butter. I will be sharing three new flavors I recently tried. 

The first flavor is: Honey + Flax

I love that this almond butter has flax in it. If you don't know about the benefits of flax, here is a short list: 
  • contains omega 3 fatty acids
  • contains fiber
  • helps prevent colon cancer, breast cancer, and prostate cancer
  • helps lower blood pressure
  • helps improve blood sugar+

The second flavor is: Cocoa+ Coconut
If you love chocolate and coconut as much as I do, you will fall in love with this flavor. It is my guilty pleasure. I love eating it just by itself. I also have made cookies with this flavor before (link here: Healthy 3 ingredient cookies). This flavor comes handy during certain times of the month if you know what I mean... haha! Anyways, this flavor is the perfect combination of flavors and ingredients . It has a smooth creamy texture.

The last flavor: Raw + Chia

Barney Butter does it again by adding chia seeds to almond butter. Chia seeds are another superfood. Here are the benefits of chia seeds if you are not familiar with them:
  • 1 ounce (2 T) of chia seeds contains: 11 g fiber & 4 g protein
  • contains lots of important nutrients
  • contains antioxidants which help fight cancer and aging 
  • contains omega 3 fatty acids
  • lowers the risk of heart disease and type 2 diabetes

Lately, I have been reflecting on my life. One thought I had was, "What makes me happy?" It is nice to reflect on your life because it makes you appreciate it that much more. Find what makes you happy, do that daily, and you will live the best life ever. Another tip: laugh often! I love to workout, explore outside, get creative, and I love helping others. What makes you happy?

 I just completed Week 1 Full Body of the BBG or Bikini Body Guide (Link here: Kayla's BBG) and it was killer. I was so sweaty afterwards. Who else is doing BBG?

Caveman's Cupboard

Hello cupcakes,

Let me introduce you to a new awesome company I found: Caveman's Cupboard. They are a Paleo Company. Check out their website.

I got the chance to try two of their Cavebutters. Let me tell you a little about them...

One thing I love about this flavor is it's Whole30 approved! Here are the ingredients: Raw Organic Cashews, Raw Organic Almonds, Raw Organic Coconut Oil, Raw Organic Cacao Powder, Organic Coffee
Look at this delicious- awesomeness. These jars are also so cute! If you are a coffee lover, you will be head over heals for this flavor. I am going to be using this on top of banana slices very soon.

Here is the second flavor I tried: Cinnamon Cashew Butter

Here are the ingredients for this flavor: Raw Organic Cashews, Raw Organic Coconut Oil, Raw Wildflower Honey, Organic Cinnamon

Look how creamy this flavor looks. This flavor would be great on top of pancakes so that the butter melts a little bit.
They also have a coconut almond flavor and power flavor that I am dying to try!

Homemade Paleo Waffles

Hello cupcakes,

Since I fell in love with Paleoful waffles, I thought I would try to recreate my own mix. I like to experiment in the kitchen, and I also like saving money. I thought I would share this with you in case you are not able to purchase the mix.

Here are the waffles I made:

Ingredients for waffle mix:
  • 1 c almond flour
  • 1/2 c coconut flour
  • 1/2 c arrowroot flour
  • 1/3 c cassava flour
  • 1/4 t baking soda
  • 1/4 t cream of tartar
Mix dry ingredients together in a container. 

Ingredients for waffles:
  • 1/2 c waffle mix
  • 2 T egg whites
  • 1 T applesauce
  • 1 T coconut oil
  • 2 T egg whites
  • Unsweetened almond milk

-Mix all ingredients together in a large bowl while the waffle maker preheats. The batter should be one the thicker side, but if it is too thick add almond milk until desired consistency. Once the waffle maker is heated, pour the batter into the waffle maker.

I used Date Lady Caramel Sauce again on top. You could probably try to recreate this if you wanted because there is not many ingredients.

I am going to make a big batch of the mix so I can make waffles anytime I want!

Other healthy waffle topping ideas:
  1. Banana slices and homemade nut butter
  2. Honey and coconut
  3. Warmed up cashew butter with homemade date paste

Meal Prep with Easy Lunch Boxes

Hello my lovely cupcakes!

Weekly Meal Prep Post...

My meal prep went down on Saturday. I got the chance to use my new Easy Lunch Box! This lunch box is so handy. I can fit the three containers inside one lunch box. Each container has separate sections to keep your food separate or to help portion. This is perfect to take with me during the day because I like to eat all day long.

I got the "Brights" lunch box containers. They also offer urban and classic color options.
I started off by frying up some Paleo Bacon (found at Earthfare). This was to die for! Of course I had to have a few pieces after I made it. 
I used a little bacon grease to cook up some garlic. 
Then I added sliced up peppers to the pan and cooked until tender. 

I also whipped up some homemade guac. This guac is 2 mashed avocados, garlic powder, and pink Himalayan salt. How perfect are these containers though? I like keeping the guac and peppers separated.

I cooked a venison roast in the crock pot for 8 hours on low. After it was cooked, I shredded the meat and returned it to the crock pot with my homemade bbq (whole30 approved) sauce. 

Ingredients in BBQ sauce:
1 can of tomato paste
balsamic vinegar
pink Himalayan salt
garlic powder
hot sauce
Date Lady caramel sauce 
-mix all together to taste. Start off by adding a little of the ingredients to the tomato paste. You can always add more. 
Here is the finished product. I added some leftover whole30 approved chicken sausage to some of the meals.

Paleoful Waffles & Date Lady Caramel Sauce

Hello cupcakes!

So... I have been dreaming of waffles. I am a huge waffle fan and I recently bought a waffle maker of my own. I am completely in love with it. I choose waffles over pancakes! Which is your favorite?

Now most people believe waffles are unhealthy, but I am here to tell you waffles can be healthy! I recently tried out a new waffle mix by Paleoful. I purchased this off of Amazon. Here is the link: Paleoful Waffle/Pancake Mix- Amazon . It costs $10.99 and there is free two day shipping if you are a prime member (I seriously love my prime... thanks to my lovely boyfriend who got this for me! I use it literally once a week).

This a totally Paleo waffle mix which means there is NO: gluten, dairy, artificial sweeteners, or artificial ingredients! SCORE! Finally a waffle you do not feel guilty about eating & one that does not upset your body.

The only ingredients are: almond flour, arrowroot flour, coconut flour, coconut sugar, cassava flour, baking soda, cream of tartar, and Himalayan salt.

The only ingredients I added to the mix was: unsweetened almond milk, unsweetened applesauce, and coconut oil.

How simple!

I like that these waffles turn out crispy on the outside and soft on the inside. I actually prefer the taste and texture of these to other waffles I have had in the past. Here is the link to their website: Paleoful. They also offer other Paleo mixes.

Crockpot Supernola Apples

Hello cupcakes,

I recently tried out some Supernola, and it was so tasty! I decided to try out a recipe using it! Below is the recipe for Crockpot Supernola Apples.

Let me tell you a little about Supernola. They have two flavors: Dragon Fruit Limon and Goji Spice.
There are also different size options available.

Here is Supernola's philosophy:

"We believe that food is fuel.  Your body is a Model T and food is its gasoline. Why would you put anything less than the highest quality fuel into your Model T? After all, it's all you've got. It's the first and last Model T ever made. Well, we think the answer is because the best food ("healthy" food) either tastes like it's supposed to be healthy (ew.), or it isn't actually that good for you.  But WHY?  "Never stop asking why" drove us to begin finding a solution.  Why does food have to be any less tasty than a brownie sundae to be healthy? Why is it good for you if it tastes like dirt? Why can't my Model T and my taste buds get along with my gasoline? Why has no one solved this problem?!
Supernola is just the beginning. You're welcome in advance."

How cool is that? I have so much respect for companies that use healthy, natural ingredients. I love that this granola is grain free, gluten free, and non GMO. I also love that there are super foods in this granola. It is the first granola I have ever had with super foods!

Want to know which super foods are used:

-Hemp seeds
-Chia seeds
-Flax seeds
-Organic unrefined coconut sugar
-Organic extra virgin coconut oil
-Natural almonds
-Organic Ceylon Cinnamon
-Organic ground ginger
-Goji Berries
-Red Maca
-Cyprus Black lava salt

Crock Pot Supernola Apples:

-3 large apples
-3 Tablespoons of coconut oil
-1 3/4 cup of apple cider
-1- 2.75 oz package of Supernola

-Plug in your crock pot and place on high
-Scoop out the core of the apples
This is what I used to core the apples and it worked out perfectly. 

-Place 1 Tablespoon of coconut oil into each apple's center
-Stuff the apple with Supernola (I used the Goji Spice flavor)
-Place the three apples in the crock pot so they are upright

-Pour the apple cider into the crock pot 
-Sprinkle with cinnamon
-Let the apples cook on high until tender
The finished product! How delicious do these look? I want to make these as a healthy paleo dessert for Thanksgiving. They're the perfect alternative to apple pie!
