Guac and grocery

Good morning cupcakes!

This morning I went to the grocery to do a quick prep for this week. Luckily I had some Whole30 meals prepped in the freezer because I knew I wouldn't have time to make a meal for today when I got back from my trip. I had 3 boiled eggs and a banana for breakfast. Lunch will be chicken breast with sweet potato slices, mixed veggies and avocado. Dinner will be a ground chicken burger with kale and peaches. 

Here is some guac I made this morning. Its avocados, tomatoes, red onion, cilantro, and lime juice all mixed up in a big bowl. This will be gone before the end of this weekend haha!
I also sliced up some bananas and added them to the big carton of blueberries I bought. 
Eating healthy does not have to be expensive. My grocery bill was under $50 for 7 days, 3 meals each day. That breaks down to about $2.40 per meal and I will get more nutrients than eating out. Plus, I enjoy cooking! Stay tuned for tomorrow's post and I will show you some meals I am eating this week!

Today's workout will be an evening workout. Here is my plan:

Surprise trip to North Carolina

Hello cupcakes! 

I've had an exciting weekend! I made a surprise road trip to North Carolina to see my boyfriend! We haven't seen each other in five weeks, so it was much needed time together. 
The Virginias were beautiful!

My boyfriend works for the Charlotte Hornets, so he gave us a tour around the arena. Charlotte is a beautiful city and I cannot wait to move there and explore! I will be back to visit Cory in 14 days!

The family we stayed with have a boat and we took it out on the intercostal waters near ocean isle, NC. These are pictures from the boat ride.

This is the only picture from the fireworks. Too bad we couldn't have gotten a little better one. Cory's mom was sweet and tried to take a picture with the fireworks in the background but it was hard to get a good one. 
Cory and I had a little adventure in Myrtle beach when he took me to the airport today. We rode on a pretty cool Ferris wheel.

It was an awesome trip and I'm so glad I had the experience! I cannot wait to come back and explore more. Cory and I have some pretty cool things planned to do. I will also be on my next whole30 while I'm down here, so I will post some pictures of my food. I will have a lot of time to cook so I think I'm gonna experiment with some new recipes. One thing I love about down here is all of the fresh produce stands. They are everywhere. 

 Next up.. Whole 30 round 2! Here is my grocery list for when I get back to good ol' Indiana. 
I'm gonna need a quick meal prep for the week so stand by for pictures of that! It's been an awesome long weekend! Peace out!

Sweet healthy treat

Good morning everyone!

I wanted to share a little treat I made yesterday that makes a good snack to take with you on the go. These are healthy little cookie bites, and they can be adapted to include many other ingredients (I will explain later). There are no artificial or added sugars in this recipe. They are gluten, soy, and dairy free. 
The ingredients for these cookie bites are:
  • coconut- as much as you would like
  • raisins- as many as you would like
  • 1 1/2 c. pitted whole dates
  • 12- 14 oz of almond flour
  • 2 eggs
  • cinnamon- probably 1/2- 1 tsp
  • salt (I like to use Pink Himalayan salt-more natural form of salt)- probably 1/4-1/2 tsp


Directions:
Place dates in a food processor and blend until a paste forms. Add eggs and blend until combined. Next, add almond flour, cinnamon, and salt (to taste) into food processor. Blend until combined. Stir in raisins and coconut (you could also blend them in the food processor if you would like). You can also adapt the recipe at this point to make them your own. You could add pecans and pumpkin puree. You could add dairy free mini dark chocolate chips (Enjoy life makes some good ones!). You could add applesauce or coconut oil. You could add cranberries and walnuts. The possibilities are endless!

Next, scoop the dough onto a lined baking sheet (parchment paper or aluminum foil) and bake at 350 degrees for 10-12 minutes. Let cool and then ENJOY! :)
