{Cookies} +Paleo, Gluten free, Dairy free with Anthony's Goods



Hello cupcakes! 

I know it has been awhile since I've written a blog post, but I promise I'm still alive. I completed a round of Whole30 and my meals were very similar throughout. If you want more details on what I ate, check out my Instagram page: @toriswholelife . I shared some recipes on there. 

Today I want to share a new recipe I created... let me just tell you THIS IS THE BEST FREAKIN' COOKIE I'VE MADE IN A LONG TIME!

I am a huge sucker for healthy cookies that are soft and taste good. It can be hard to make a cookie with the right texture using paleo or gluten free flours, but I think I have mastered it! Let me give you the details...


Ingredients:

1/2 c. ghee, softened
2 T raw honey (I got mine from a local farmer's market
1/3 c. agave maple syrup (Trader Joe's)
1 ripe banana, mashed
2 eggs
1 tsp vanilla
1 tsp baking powder
1 {EATINGEVOLVED} 100% Midnight Coconut Dark Chocolate Bar, broken into pieces



Directions:

In a large bowl, combine the ghee, maple syrup, & honey. Stir until combined. Next, stir in the eggs, mashed banana, and vanilla. Stir until combined. Finally, stir in the remaining ingredients (all but the chocolate). Once it is a dough form, fold in the dark chocolate pieces. Bake in a 350 degree F oven for 10-15 minutes or until the tops start to turn golden.
