Homemade Pumpkin Coconut Larabars

Hey my little cupcakes!

I wanted to share a new recipe with you. I made some homemade Larabars using only 3 simple ingredient.

Ingredients:
-dates
-raw pumpkin seeds
-unsweetened coconut
-pink Himalayan salt (optional)
-any other add-ins if you want (i.e. raisins, unsweetened chocolate chips, cashews, cranberries, etc.)

Directions:
In a food processor blend dates. I like to add hot water slowly while blending to make the date paste smoother and not as thick. Add the pumpkin seeds, coconut, & salt(and other add-ins if you choose). Pulse until combined and there are still chunks of seeds. Scoop the mixture out and into a 9 x 9 baking pan. Press the mixture down. Place in the fridge for 30 minutes to 1 hour. Then you can take the pan out and cut into bars.
