Tonight I am making some cold brew coffee!
Cold brew coffee is less acidic than hot brew coffee... by 67%! WOW! This means it is healthier for your stomach and teeth. I have bad acid reflux so this find is absolutely amazing especially with the craziness of grad school. Less acid also means better flavor. The cold brew coffee also doesn't taste stale the second day like hot brewed coffee does. The process of making it is also very simple. Just allow yourself 12 hours to a day to prepare it.
Ingredients: 1 3/4 c. ground coffee beans & 3 1/2 c. cold water
Directions: Place coffee grounds and water into a pitcher (cover with plastic wrap) or glass bowl with a lid and stir. Cover the container and let sit for 12 -24 hours. Once the time is up, put a cheese cloth into a strainer and dump the mixture slowly through the strainer. Once you get to the bottom with the grounds, discard all the chunky "stuff." Place cold brew coffee back into the container and refrigerate for 2 hours. Then... ENJOY! You will want to dilute the cold brew coffee because it is very concentrated. I would suggest adding 50/50 or 25/75 coffee to unsweetened cashew milk or whatever you want to dilute your coffee with.
