Good ol' Indiana

Hello my little cupcakes!

Sunday I was back in my small little hometown in Indiana. After flying all day, I was ready for a good easy meal. I cooked up two scrambled eggs (yes I eat the yolks! They are so good for you), sliced up avocado with garlic powder, onion powder, and pink Himalayan salt with a side of plantain chips from Trader Joe's. A little piece of Charlotte I brought home with me :) I try to have fasts, protein, and carbs at every meal because it keeps you full longer and allows you to absorb all the vitamins and minerals from the food you are eating. Eating healthy doesn't have to be hard or time consuming. This meal was so easy! I cooked it up in less than 5 minutes. 

One thing about Indiana... we have beautiful sunsets! 
I missed my spiralizer while I was in Charlotte, so Monday I decided to make some zoodles! I like to cook them just long enough so that they aren't hard but they aren't mushy either. I have found if I watch the noodles change color, I need to pull them before they get translucent looking. I got my spiralizer from Amazon and the brand is Pederno. I absolutely love it!
Here was a meal I made out of the zoodles. It has apple chicken sausages (whole30 approved), mushrooms, red onion, and kale. I had a side of guac with this to make it a protein, carb, and fat meal. My mom tried the zoodles I made and she was amazed at how delicious they were. She said "I need Tori to cook for me every day so that I eat healthy." If I was home more often mommy, I totally would!
For breakfast this morning I had banana pancakes. I have posted the recipe before, but for those of you who are new... the recipe is so simple. I use one banana and two eggs. If you want to double it and have leftovers for tomorrow then use 2 bananas and four eggs. I blend it in a food processor but you can also mash the banana with a fork and stir in the eggs if you don't have a food processor. I cook mine in a skillet with coconut oil. Let them cook on one side for while until the top isn't runny. Then flip! They get a little dark on one side but they don't ever taste burnt. I like to top mine with my homemade almond butter (again.. protein, fat, and carb!). The bottom pancake in this picture looks a little different because I added some dark chocolate cocoa powder to the batter to switch it up a little.
