Good morning everyone!
I wanted to share a little treat I made yesterday that makes a good snack to take with you on the go. These are healthy little cookie bites, and they can be adapted to include many other ingredients (I will explain later). There are no artificial or added sugars in this recipe. They are gluten, soy, and dairy free.
The ingredients for these cookie bites are:
- coconut- as much as you would like
- raisins- as many as you would like
- 1 1/2 c. pitted whole dates
- 12- 14 oz of almond flour
- 2 eggs
- cinnamon- probably 1/2- 1 tsp
- salt (I like to use Pink Himalayan salt-more natural form of salt)- probably 1/4-1/2 tsp
Directions:
Place dates in a food processor and blend until a paste forms. Add eggs and blend until combined. Next, add almond flour, cinnamon, and salt (to taste) into food processor. Blend until combined. Stir in raisins and coconut (you could also blend them in the food processor if you would like). You can also adapt the recipe at this point to make them your own. You could add pecans and pumpkin puree. You could add dairy free mini dark chocolate chips (Enjoy life makes some good ones!). You could add applesauce or coconut oil. You could add cranberries and walnuts. The possibilities are endless!
Next, scoop the dough onto a lined baking sheet (parchment paper or aluminum foil) and bake at 350 degrees for 10-12 minutes. Let cool and then ENJOY! :)
