Day 21 Whole30- grocery shopping & food prep

Hello cupcakes!

I just went to the grocery this morning. If anyone tells you that eating healthy is expensive... they don't know the truth! This is cheaper than eating out at most fast food places and also a lot better quality. I cannot wait to actually have a farmers market to go to every weekend when I move to Charlotte. Today I shopped at Walmart for the sake of time. I was time limited because I had to be somewhere this morning. So my receipt total was around $72 once I subtracted my brita filter and sunscreen. The total was about $62. I eat about four meals a day and some snacks if hungry. So, 62/7 (7 days a week)/4 (4 meals a day) each meal is a little over $2! Whoop!

I made some kale chips from Taralynn's blog. All it takes is olive oil and I used pink Himalayan salt, garlic powder, and chili powder. Bake 250 degrees for 45 minutes.

This was my first time using my new julienne peeler! I used some zucchini and sweet potatoes.
I added the sweet potato and zucchini slices to a pan with some sliced green onion and coconut oil. 
I cooked up some chicken breast tenderloins. 
I sauteed some red onion and green pepper and cooked in coconut oil.
I cooked up some zucchini and mushrooms in the microwave. 
I cooked up some eggs!
Here is my unstuffed pepper prepped meals. I will top it with avocado later.
I also cut up some strawberries and added some blueberries. I LOVE fruit!

My prepped meals are as follows:
Preworkout: fruit and my homemade nut butters
Breakfast: zucchini, mushrooms, eggs, and avocado
Lunch: unstuffed peppers
Dinner: zucchini and sweet potato noodles with chicken with a little bit of Whole30 mayo
Prepped snack: carrots and homemade nut butter

    50 min weights (legs)

    Breakfast: banana, 2 eggs with avocado slices
    Lunch: tilapia with sauteed spinach
    Snack: walnuts with 1 c blueberries
    Dinner: chicken breast, sweet potato, sauteed mushrooms
    Snack: turkey burger (homemade), baked sweet potato slices, spinach


    I am going to try the zuchinni noodles! I have made them before, but peeled them for larges slices. They looked like ribbons.

    I loooooove kale chips! I make them a few times a month. I think I have learned that I treat myself to healthy treats, when it isnt necessary. I am glad I decided to join you in this Whole30 challenge. I definitely feel better and I have come to realize that I was eating healthy desserts/treats to mask cravings and a give in to a bad habit. I would recommend this to anyone, even if they eat healthy like you and I!

    1. The zucchini noodles are so fun! I can't wait to try different recipes with them. I think I need to work on the kale chip recipe. I think I put too many kale pieces in the pan. Do you have any advice for making them Alyssa? I agree with you, I think healthy treats were masking other feelings and emotions. I found myself yesterday wanting a healthy treat and then I thought to myself... why am I having a craving. Turns out it was an emotion I was feeling and not actual hunger. I think everyone can benefit from doing the Whole30! :D I love hearing from you Alyssa! Thanks for all of your comments :)

  2. I bake it at 400 degrees for 45 min to an hour. Every 10-15 minutes I stir them a little. They definitely come out crispier. Sometimes if I don't feel like buying bunches of kale I will buy a huge bag of kale. They have it at Aldi! I want to try eating vegan next. I tried it before, but my parents weren't supportive and I felt guilty about it. Additionally, they were concerned it would be too restrictive. Are there any other things you are thinking about trying?
